Tofu Scramble

This tofu scramble is a simple, nourishing staple made with firm tofu, fresh vegetables, and warming spices like turmeric and paprika. It’s a flexible, satisfying dish that comes together quickly and can be adapted to whatever you have on hand.

 

Gather :

  • ½ block firm tofu

  • 2 cloves garlic chopped

  • ⅓ cup red onion chopped

  • ½ cup cherry tomatoes chopped

  • ¼ cup carrots shredded or chopped

  • ½ cup spinach or other greens

  • 1 tbsp turmeric

  • 2 tbsp nutritional yeast

  • 1 tbsp paprika

  • 1 tbsp olive oil

  • Salt & pepper to taste

 

Create :

  • Remove tofu and drain, press between cloths or paper towels for 10-30 min. This step isn’t required but will aid in an even cook.

  • Prep vegetables with whatever chop you prefer!

  • Heat medium//large pan to medium heat and add an initial drizzle of olive oil when to temp.

  • Add chopped garlic and onions and continue moving around to avoid browning in the initial aromatic cooking.

  • Crumble tofu into the pan and stir around, then add another drizzle of olive oil, turmeric, paprika, and nutritional yeast.

  • Cook for x minutes - if tofu is appearing too dry, you can add additional olive oil, vegan (or non vegan) mayo, sour cream to moisten.

  • Add in the carrots, tomatoes, and peppers and continue cooking.

  • Add in more nutritional yeast, black pepper, and any other spices you’d like - I recommend cumin, red pepper flakes, and always more turmeric!

  • Add in greens for final cook and any additional toppings you may like - I recommend chopped green onions, crispy chili onion seasoning (Trader Joe’s), red pepper flakes.

  • Dig in!

This is one of those grounding, flexible meals I often come back to when I want something simple, warm, and nourishing without overthinking it.
